This exceptional Bolivian coffee comes from Finca Chuquiago, owned by Felipe Guarachi Tola. Grown in Bolivia’s celebrated La Paz coffee region, it benefits from fertile soils, abundant mountain water, and an ideal climate for specialty coffee cultivation. The farm’s name honors “Chuquiago Marka,” the Indigenous Aymara name for present-day La Paz, reflecting its cultural roots. Each lot is carefully washed and processed on-site, with cherries sorted, depulped, fermented, and slowly dried to enhance sweetness and clarity. The flavor profile is intense molasses and dried grapefruit flavors with mild acidity and candy-like sweetness.

The Abadatezuka Cooperative is a group of smallholder farmers in Rwanda's Western Province who deliver their coffee in cherry to the Cyato Washing Station. We chose their coffee deliberately because of the tasting notes: the first sip almost suggests a dark hot cocoa, but then it takes a nice turn to bring the fruity, winey, berry notes. It's all balanced by a light mulling spice nuance…a real crowd pleaser! This coffee was intentionally processed utilizing anaerobic fermentation, which we find often brings out an increase in the intensity of fruit and acidity and a slight increase in the body.
