East Timor: Ermera

This coffee comes from the Ermera region of East Timor, the country’s primary coffee-growing area, with farms located in the highlands of Letefoho. Produced by smallholder farmers, coffee here is typically grown under shade using traditional methods. This regional lot includes a mix of Timor Hybrid, Typica, Catimor, and Sarchimor varieties and is washed processed, resulting in a clean and structured cup profile. Grown at 1400–1900 MASL, Ermera’s mountainous terrain, steady rainfall, and cool tropical climate support slow cherry development and balanced flavor. The result is a nuanced cup with notes of green tea, cocoa, cooked fruit, and pecan, complemented by tart acidity and a mellow sweetness.

Coffee has been central to East Timor’s history and economy for centuries, and today it remains a vital source of income for rural communities across the country.

Brewing Suggestions

The Abadatezuka Cooperative is a group of smallholder farmers in Rwanda's Western Province who deliver their coffee in cherry to the Cyato Washing Station. We chose their coffee deliberately because of the tasting notes: the first sip almost suggests a dark hot cocoa, but then it takes a nice turn to bring the fruity, winey, berry notes. It's all balanced by a light mulling spice nuance…a real crowd pleaser! This coffee was intentionally processed utilizing anaerobic fermentation, which we find often brings out an increase in the intensity of fruit and acidity and a slight increase in the body.
