This month's Origin Select is a natural-process microlot from Colombia's Cauca Department. Patio Bonito is a hardworking, innovative family-run farm. Founder Carlos Arturo Trujillo has farmed coffee for almost 50 years, and he is assisted by his daughter, Paola, a former cupper and buyer who has been integral in perfecting the farm’s fermentation process. This microlot features the rare Pink Bourbon coffee cherry varietal. Intentionally processed using anaerobic fermentation, this lot offers strong cooked cranberry, dried apple and lavender, with boozy acidity and candy-like sweetness. Cauca’s elevation of 1700 MSL and it's ocean winds make it one of Colombia’s coolest growing regions.

The Abadatezuka Cooperative is a group of smallholder farmers in Rwanda's Western Province who deliver their coffee in cherry to the Cyato Washing Station. We chose their coffee deliberately because of the tasting notes: the first sip almost suggests a dark hot cocoa, but then it takes a nice turn to bring the fruity, winey, berry notes. It's all balanced by a light mulling spice nuance…a real crowd pleaser! This coffee was intentionally processed utilizing anaerobic fermentation, which we find often brings out an increase in the intensity of fruit and acidity and a slight increase in the body.
