Mexico Baxtla: Featured Origin Select Coffee

    Every month I get the pleasure of choosing a new single origin coffee to purchase and roast for our Origin Select program! It’s exciting to be able to choose where in the world our “travels” will take us next, though at times the amount of options can be daunting! For now we rely on relationships with reputable stateside green coffee importers who maintain direct relationships with the folks at origin, and ensure that farmers are being paid TOP DOLLAR for the product they are exporting. 

Our Origin Select coffee this month comes from theBaxtla region of Veracruz.This smooth, easy-drinking coffee features soft orange blossom brightness, chocolate richness and a lingering chocolate and candied citrus finish. We decided on a medium/dark roast profile this month, to really highlight the cocoa notes inherent in Mexican coffees. 

Mexican coffee has a fantastic history, though until the last 20 years or so, Mexican coffee was often looked at as a cheap, low-grown blender. However, today, high-grown Mexican coffee has extremely interesting complex citric and malic acidity, balanced sweetness in the form of chocolate and toffee, and an overall clean cup.

In 2009, 16differentproducerscame together to form Productores de Café Sustentable de Baxtla. Their operating philosophy is to increase productivity and improve the quality of their coffees by performing selective cuts during harvest and developing more efficient practices in order to achieve a better standard of living for workers and their families, and the environment. They created standards for soil conservation, management of shade, specific rational fertilization and integrated management of pests and disease in harmony with the environment.
