Our Origin Select coffee this month comes fromthe Rwenzori region in Southwest Uganda. This is a collection of coffee from small-holder producers in the region. The cherries are selectively picked and brought to the processing station on the same day. They are naturally processed by separating the bean from the cherry by floatation and then put onto drying tables for 21-35 days.

The Abadatezuka Cooperative is a group of smallholder farmers in Rwanda's Western Province who deliver their coffee in cherry to the Cyato Washing Station. We chose their coffee deliberately because of the tasting notes: the first sip almost suggests a dark hot cocoa, but then it takes a nice turn to bring the fruity, winey, berry notes. It's all balanced by a light mulling spice nuance…a real crowd pleaser! This coffee was intentionally processed utilizing anaerobic fermentation, which we find often brings out an increase in the intensity of fruit and acidity and a slight increase in the body.
